Ingredients
  • 1 whole (2 - 3 lbs) tilapia (or any white fish) (cleaned and gutted, seasoned with salt & pepper)
  • cooking oil (for frying fish, 3 tbsp for sauteeing)
  • green onions (for garnish)
  • Sauce Thickener
  • 1 tbsp cornstarch
  • 1 tbsp water
  • Sauce
  • 2 tbsp brown sugar
  • 3 tbsp ketchup
  • 1 tbsp soy sauce
  • 2 tbsp vinegar
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 cup ginger (strips)
  • 3 - 5 cloves garlic (minced)
  • 1 medium-sized shallot (or onion) (cut into rings)
  • 1 cup carrot (strips)
  • 1/2 cup red bell pepper (strips)
Instructions
  1. Fry fish thoroughly on both sides. Set aside.
  2. Sauce
  3. In a large skillet over medium heat, add 2 - 3 tbsp of cooking oil.
  4. In a mixing bowl, add water, soy sauce, vinegar, ketchup, brown sugar, salt and ground black pepper. Whisk to incorporate the ingredients and then set aside the liquid mixture.
  5. Dilute cornstarch in 1 tbsp of water. Set aside.
  6. Add ginger and saute. Let it release its aroma and flavour.
  7. Add shallot and saute until it turns translucent.
  8. Add garlic and saute until it turns light golden brown.
  9. Add carrot and stir fry for a few minutes.
  10. Add the liquid mixture into the skillet. Cover and bring it to a boil.
  11. Add diluted cornstarch into the skillet to thicken the sauce. Give it a quick mix.
  12. Add bell pepper and turn off heat. Let the remaining heat steam bell pepper.
  13. Sprinkle half of the green onions over the sauce.
  14. Place friend tilapia on a platter and pour over the sauce on top. Garnish with the remaining green onions and serve with steamed rice. Enjoy!
