Ingredients
  • 2 tbsp cooking oil
  • 8 cloves garlic (minced)
  • 1 medium-sized onion (sliced)
  • 1/4 cup tomato (chopped)
  • 1/2 - 1 kg squid (cleaned, washed and drained)
  • 1 tsp ground black pepper
  • 1 - 2 tbsp fish sauce
  • 1/4 cup lemon juice
  • 1 1/2 tbsp sugar
  • 1 - 2 tsp sriracha or red chillies ((optional))
Instructions
  1. In a hot skillet or medium-sized sauce pan, add cooking oil and sauté garlic until it turns golden brown.
  2. Add onion and sauté until it becomes translucent.
  3. Stir in tomato and let it release its juice.
  4. Add squid into the pan, including the ink and fat (optional).
  5. Add ground black pepper, fish sauce, lemon juice, sugar and sriracha or red chillies for a kick.
  6. Cover and let it boil. It’s important not to over cook the squid. Otherwise, it will become rubbery.
  7. Give it a stir to loosen up the bottom of the pan and taste. Adjust according to taste.
  8. Remove from the heat and serve while hot. Enjoy!
