Ingredients
  • 2 canned sardines (in tomato sauce) (155 g each)
  • 1 medium-sized chayote (sliced diagonally)
  • 1 medium-sized onion (chopped)
  • 1 medium-sized tomato (chopped)
  • 4 - 6 cloves garlic (minced)
  • 2 tbsp cooking oil
  • 2 tbsp fish sauce (or patis)
  • ground black pepper
  • 1 - 2 red chilli (optional)
  • bunch spinach (or malunggay, chilli leaves)
Instructions
  1. In a pan over medium heat with cooking oil, add onion and sauté until it becomes translucent.
  2. Add garlic and sauté until it turns light golden brown.
  3. Add tomato and sauté until it released its juice.
  4. Add chayote, fish sauce and ground black pepper to taste. Give it a quick stir.
  5. Add canned sardines and red chilis into the pan. Cover and let it simmer for 3 minutes.
  6. Add spinach and try to slowly incorporate the ingredients together until the spinach withers a bit.
  7. Turn off the heat. Serve with steamed rice while it’s hot. Enjoy!
