Ingredients
  • 3 egg yolks
  • 3 stalks fresh thyme
  • 4 tbsp milk
  • 50 g parmesan cheese
  • 6 bacon (cut into small pieces)
  • 200 g pasta (farfalle)
  • salt and pepper
  • parsley (for garnish)
Instructions
  1. Cook pasta according to package instructions. Set aside.
  2. In a bowl, mix egg yolks, milk, a pinch of salt and pepper and thyme. Whisk to incorporate the ingredients and set aside.
  3. In a hot pan, add bacon and let it render its own fat.
  4. Once toasted, remove bacon from the pan and set aside.
  5. Remove excess oil from the pan. Leave about a tablespoon of oil.
  6. Turn the heat to medium low and add pasta into the pan.
  7. Stir pasta alternating the pan between with heat and no heat.
  8. Add toasted bacon and the egg mixture. Stir once again alternating the pan between with heat and not heat.
  9. Add a generous amount of parmesan cheese into the pan.
  10. Stir all ingredients until well-incorporated. Serve in a plate and garnish with parsley. Enjoy!
