  • In a pot over medium heat, add cooking oil. Once the oil is hot, add onion. Saute until it turns translucent.
  • Add garlic and saute until it turns light golden brown.
  • Add shredded chicken into the pot and saute.
  • Add carrot and green beans. Mix and cook for 2 minutes.
  • Add celery, cabbage, fish sauce and a dash of salt and pepper into the pot. Give it a good mix for 2 minutes. Adjust salt and pepper to taste.
  • Add red bell pepper and mix again for a minute. Turn off heat.
  • Transfer vegetables into a bowl and set aside.
  • Using the same pot, add chicken broth and sea salt. Bring to a boil and add chicken cube and diluted annatto powder. Use fish sauce to adjust saltiness.
  • Let the broth simmer over medium heat and add the cornstarch stick noodles. Let it simmer until the liquid is absorbed and the noodles are cooked.
  • Gradually scoop out the vegetable mixture over the noodles. Mix it gently using a tong to not break the noodles and incorporate all the ingredients.
