Ingredients
  • 500 g papaya (grated)
  • 1/2 large-sized onion (chopped)
  • 1 1/2 cup cornstarch
  • 10 g annatto powder
  • a bunch coriander (or parsley) (chopped)
  • 250 g shrimp (peeled, deveined)
  • cooking oil
Instructions
  1. In a large bowl, combine all the ingredients except for the cooking oil. Set it aside.
  2. In a large skillet, heat enough cooking oil to deep fry the fritters.
  3. Once the oil is hot, grad a handful of the papaya mixture and place in the pan. Slightly press down on the fritter using a spatula. Fry each side of the fritter for a minute or until it turns golden brown. Don't let it burn. Repeat this process until you've used all the papaya mixture.
  4. Serve in a platter with vinegar dipping sauce. Enjoy!
