Soft and Fluffy Pandesal

Ingredients
  • 3 1/2 cup all-purpose flour
  • 1 cup evaporated milk
  • 2 tbsp butter
  • 1 1/4 tsp active dry yeast
  • 3 tbsp sugar
  • 1 1/4 tsp salt
  • 1/2 cup water
  • 1/2 cup breadcrumbs
Instructions
  1. In a saucepan, melt butter over low heat.
  2. Add evaporated milk, water and sugar. Stir until sugar has dissolved completely.
  3. Turn off heat. Set it aside and let it cool down to lukewarm.
  4. Once it cooled down, add active dry yeast in to the mixture. Give a quick stir with a stick and cover with a cloth. Let it rest for 10 minutes. Set aside.
  5. In a large bowl, combine all-purpose flour, sugar and salt. Add the wet ingredients into the dry ingredients. Mix to incorporate all the ingredients. You can use a stand mixer to speed up the process, if available. Use the flat beater attachment to mix.
  6. Remove the dough and knead on a flat surface. If you're using a stand mixer, change to hook attachment to simulate kneading. Knead for 5 - 6 minutes or until dough becomes smooth.
  7. Transfer dough in a lightly greased bowl and cover with a cloth or plastic wrap. Let it rest for 45 minutes or until it doubles in size.
  8. The dough should double in size after 45 minutes. Remove the dough from the bowl and place on a flat surface.
  9. Form dough into a long log and cut into 16 pieces (medium-sized pieces) or 8 pieces (large pieces).
  10. Form pieces into balls. Coat each piece with breadcrumbs and place in a baking sheet or pan. Cover with a cloth or plastic wrap for about an hour.
  11. After an hour, the dough pieces will increase even more in size. Remove plastic wrap and bake at 350F for 18 - 20 minutes or until it turns golden brown.
  12. Remove from the oven and serve. Enjoy!
